Year-round households, not only summer

Unlike the islands, much of what we place here is permanent: families who live in Valencia or the Costa Blanca all year and want a chef in the house every week. That changes the brief — it's a long relationship, and the fit between chef and household matters more than a dazzling tasting menu.

Market cooking, properly

The Mercado Central and the Ruzafa market are among the best produce in Europe, and the chefs we place here use them. Rice, seafood, the Valencian huerta — a chef who cooks this region well is worth more to a household here than one importing a style from somewhere else.

We are on the ground

This is our home market. We meet chefs here in person, we know the suppliers, and we can be at a household the same week. That is not true of every region we cover, and we would rather say so than pretend otherwise.
